Golden Egg Blini Volcano

Total Time: 25 minutes (you are making the Blini which takes up all the time but well worth it!)

My Golden Egg Blini Volcano is a meal for royalty using incredible hickory smoked bacon from Bill-E's Bacon (
, double cream brie cheese, D.a.T. Sauce (, fresh eggs, my home made bellinis, and real 24 karat gold leaf. You will see the top of the volcano as you look down with the lava flow on the edges where the bellinis hold a delicious mound of egg, bacon, cheese, and the D.a.T. Sauce which is the hot molten lava which then cools in brie cheese fashion carrying the gold.  There are four pieces which are designed to be picked up by hand and eaten in one king size bite.  This is an eruption of flavor you won't forget!


  • 1 cup all-purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup milk
  • 2 tablespoons milk
  • 3 large eggs
  • 1 tablespoon melted unsalted butter
  • 1 tablespoon unsalted butter
  • 2 Slices of Bill-E's Bacon (
  • 1 oz Double Creme Brie Chees
  • 1 Tbsp D.a.T. SaUcE (
  • 1 leaf of real 24 karat gold



  • Step 1
  • Combine flour, salt, and baking powder in a bowl.
  • Step 2
  • Whisk 3/4 cup plus 2 tablespoons milk, egg, and 1 tablespoon melted butter together in a separate bowl. Mix into the flour mixture until batter is fully combined.
  • Step 3
  • Heat 1 tablespoon butter in a skillet over medium-low heat. Drop batter, 1 tablespoon at a time, onto the heated skillet. Cook until bubbles form, 1 1/2 to 2 minutes. Flip and continue cooking until brown, about 1 minute more. Lay on plate lined with a paper towel to help soak up excess butter. Repeat with the remaining batter. Set aside in warmer if possible.
  • Step 4
  • PUT Bacon in Air Fyer or skillet and cook, removing and setting aside
  • Step 5
  • Make your egg omelete using the two remaining eggs in a large pan so your egg cooks fairly quick. Using medium heat pour in two eggs which have been hand beaten. Let the omelete firm up and slowly roll around the egg in the pan util all the egg starts to cook and let sit.  Using a good non-stick pan is important, or a pan sprayed with PAM works well. 
  • Step 6
  • Place the omelete on your cutting board and cut in half. Use one half to create the top half of the volcano. Then with a round 3 inch cookie cutter, cut out as many circles of egg from the other half of the egg omelette. You should get 4-5 pieces out of it.  
  • Step 7
  • Place your bacon on top of your blini, then place a strip of brie cheese across the top of the bacon. Add a dollop of D.a.T. Sauce on the back edge of the cheese making sure to keep the entire portion of the cheese exposed.
  • Step 8
  • Using a handheld kitchen torch or toaster, heat the top of the cheese until it starts to melt and then place the 24 karat gold leaf in the center of the melted cheese for the final touch of his incredible dish. 

Tips: Your batter may be too thick as mine was, so add a little more milk to thin it out. Make sure you use 1 Tbsp or little less to ensure you keep your pancake small and not overly thick.
