Marcona Almond Bacon Wrapped Prawns

 Bacon Wrapped Marcona Almond Scallops










Total Time 45 minutes

Serves 2 people
Ingredients 

  • 16 extra large prawn
  • 4T Knotty Wood BBQ Almond Blossom Honey (https://knottywoodbbq.com)
  • 1T each of Ocean State Pepper Company Narrangansett Bay and Surfs Up Seasoning (https://rhodypepper.com)
  • 2T Avocado Oil
  • 1 small pack of Marcona Almonds
  • 3 slices of Bill-E's Hickory Smoked Bacon (https://billesbacon.com)
  • 1T of Sambal Sauce
  • 1 small jalepeno
  • 2 yams or sweet potatos 

Preparation

  • Crush your almonds to a fine/med density as in the Instagram video and set aside. (WATCH ME COOK IT AND CLICK HERE )
  • Slice your Jalapeno and set aside.
  • Cook your yam or sweet potato ahead of time (prick your potato!) so it is done when you put your prawn in the pan. I do two 25 min. sessions, rotating every 12 minutes. 
  • Cut each bacon strip into 1/3 or 1/2 pieces depeding on how wide your bacon comes cut. Cook Bacon until medium (should be done but not cripsy). Set aside.
  • Season prawns with dry seasoning above (or your favorite seafood seasoning).
  • Using a non-stip pan (I used Hexclad https://www.hexclad.com) add your oil and get it hot.
  • Cook your prawns for about 1-2 minutes per side until nice and pink (be careful not to overcook).
  • Take off cooked prawns and coat with Knotty Wood BBQ Almond Blossom Honey.
  • Coat prawns with your Marcona Almonds.
  • Wrap each prawn with your bacon.
  • Open your yam or sweet potato and add some butter, salt, pepper. Do not any any other seasonings as you want the yam or sweet potato flavor to shine. Put in shallow bowl.
  • Plate your bacon wrapped prawn on top of your potato.
  • Place remaining crushed Marcona almond around perimeter of potato.
  • Set one slice of Jalapeno on top of the prawn
  • Place 1 heavy drop of Sambal sauce in the center of the Jalapeno.
  • Enjoy!

Tips

Getting the honey on a hot prawn can be a challenge. Use a silicon brush and get a good amount on there to get it brushed all over, and don't be shy.
You won't overcoat it by brushing and it will be a perfect sweetness to compliment the shrimp, almonds and bacon.
