A traditional Mexican Ceviche
In a large glass bowl, combine the shrimp
with the lime and lemon juice. The acidity of the citrus juices will "cook"
the shrimp. Cover and refrigerate for about 30 minutes to 1 hour, until
the shrimp turn opaque and are fully cooked.
While the shrimp is marinating, chop
the onion, jalapeño, cilantro, tomato, cucumber, and avocado.
Once the shrimp is ready, drain any
excess liquid. Add the chopped onion, jalapeño, cilantro, tomato,
cucumber, and avocado to the bowl with the shrimp.
Pour in the orange juice, hot sauce, olive oil,
salt, and black pepper. Mix everything gently to combine all the flavors.
Cover and refrigerate the ceviche for an additional 15-20
minutes to allow the flavors to meld.
Serve the shrimp ceviche chilled with tortilla chips or
tostadas.
