Smoked lamb shanks, braised in red wine, served with red wine sauce and garlic cheesy mashed potatoes.
Preheat smoker to 220°F using 100% Almond Cabernet Wine Pellets.
Season lamb shanks with Knotty Wood BBQ Rub
Smoke lamb shanks for until they reach 165°F (about 2 hours)
In a aluminum pan with lid, add wine, onion, shallots, and carrots.
Add smoked lamb shanks.
Cover and set smoker to 250°F until the lamb is tender at 195°F
internal temp.
Remove lamb shanks from the smoker and let rest for 10 min.
Strain braising liquid and add to med hi heat pan and reduce the
braising liquid by 2/3.
Add 1T corn starch to 2oz water and mix. Add to braising liquid.
Add butter to the reduced braising liquid and stir until melted and
thick.
Serve lamb shanks on top of garlic cheese mashed potatoes with the
braising sauce.
