Meatloaf has been around forever. I always love a juicy meatloaf and my recipe hits the spot on juicy! Beef or Turkey are the two common proteins but you can make it with other proteins as well. For my favorite meatloaf I must have cheese. A lot of cheese!
This recipe is simple to prepare and cook. I enjoy cooking this on my pellet smoker which won't do much for smoke on a hot short cook like this, but it's a great excuse to go in the backyard and enjoy the fresh air.
RECIPE
TOTAL TIME: 2 hours
PREP TIME: 15 minutes
COOK TIME: 1 hour 45 minutes (varies so use a good internal thermometer to check your meat.
INGREDIENTS
1lb Ground Turkey Meatloaf (You can use 93/7 or a higher fat content if you desiire)
4T Knotty Wood BBQ Rub (https://knottywoodbbq.com)
3 full pieces of bacon cooked 75% of the way done.
1 egg
3/4C Panko Bread Crumbs
1T Worcestershire sauce
1t Pink Himalayan Salt ground fine
1t Black Pepper ground medium
3/4C Mexican Three Cheese
1/4C Mozzarella Cheese
INSTRUCTIONS
Preparation
1. Place ground turkey in a bowl or use the container it came from like I did.
2. Add all ingredients EXCEPT the cheese in the bowl.
3. Mix well to ensure the egg is evenly mixed in along with the Panko.
4. Using a mini loaf tin (such as the Wilton Perfect Results Non-Stick Mini Loaf Pan, 8-Cavity, 15.2 IN x 9.5 IN x 1.6, Gray (AMAZON)) divide your meatloaf into 1/3lb pieces.
5. Form 1/2 of the meatloaf in the pans.
6. Place cheese in center of meat loaf.
7. Place remaining 1/2 of meatloaf on top of the cheese and seal all sides with your fingers.
8. Take bacon slices and cut each slice in two equal pieces the length of the mini meatloafs.
9. Place your partially cooked bacon on top of mini loaf.
10. Season Bacon with rub.
11. Top with your favorite bbq sauce.
COOKING
1. Preheat smoker or oven to 345ºF.
2. Places mini loaf pan in oven and place thermometer inside loafs to monitor. (A great thermometer is the Thermoworks Signals (https://www.thermoworks.com/signals/?tw=ukulelejaybbq.
3. When meatloafs reaches 160ºF, remove and let rest for 5 minutes.
4. Remove mini meatloafs (optional add garnish on top).
5. Cut in and enjoy that cheesy goodness that makes my stuffed cheese meatloaf SCINTILLATING!
