Smoked rabbit recipe

TOTAL TIME- 4 Hours


INGREDIENTS


1 RABBIT

Knotty Wood BBQ Rub (https://knottywoodbbq.com)

1/4C Honey

4T Anjou Pear Vinegar 


GLAZE


In a pan combine honey, pear vinegar and add 4T of Knotty Wood BBQ Rub.

Bring to boil then cool completely or place in freezer until liquid thickens.

Remove from freezer and keep at room temperature for the glazing process.


INSTRUCTIONS- 


Preheat smoker to 220ºF.

Season whole rabbit with Knotty Wood BBQ rub inside and out. Be generous as you want a good coating to sweat on the rabbit for about 15 minutes.

Set rabbit on the smoker for 2 hours.

Glaze rabbit and Wrap rabbit for 1 hour.

Unwrap and glaze rabbit again and keep in smoker for 1 hour or until internal temperature reaches 160ºF.

Remove from smoker and let rest for 10 minutes before slicing.
